My friend Claudio (the famous "Spritz Master") and I had been planning to cook together for months but we never really succeeded in doing it so far.
And then Summer came, and with it enough time to spend a whole afternoon preparing nice things to eat for a bunch of friends.
One of these dishes was a great hummus made with a few basic ingredients. The usual chickpeas (I LOVE chickpeas in any possible way) and great taste-makers like lime juice (lots of it) and a hint of tahini, the sesame paste with the typical intense flavour.
Hummus is easy and super fast to make if you have a food processor. We made tons of it and ate it with flat Turkish bread.
Hummus di Claudio e Nicoletta
Serves: a lot
Ingredients:
6 cans of precooked chickpeas (about 200 gr per can)
3 tablespoons of tahini
5 limes (their juice)
6 cloves of garlic
salt
olive oil extra virgin
flat-leaf parsley to decorate
Mix all the ingredients together in the food processor, season with salt if necessary and add enough olive oil to make the hummus creamy and smooth.
Drizzle with some extra olive oil and garnish with fresh parsley, whole leaves or finely chopped.
