Brilliant idea! I love Vietnamese rice rolls, but I never thought to try them at home. Doesn't look too difficult at all!

They're really great and addictive, Frank, Yesterday I even ate my salad wrapped in rice paper! Thinly sliced carrot & cucumber, rucola and a dip made with soy sauce, sesame oil and a little of wasabi mayo. Fantastic. :) Ciao!
